Super Fucking Easy Salads

Did you know that even as a married woman, I'm more the bachelor-style eater!? Yes, if I must fend for myself, it's the weirdest mix of leftovers and a bag of popcorn. This style of eating however is not so great if you're trying to stay healthy.
 

 
So I'm learning how I can make some easy 10-minutes or less salads!
 


- THE KEY IS PREP -

You're going to need to set time aside, probably twice a week, to make and chop somethings, so that you can throw it together in under 10-mins. I like to use a Kyocera Ceramic Knife so the veggies will last longer without the edges browning (often a result of using metal knives). It's a very sharp knife that stays sharper longer too! 

If you hate to meticulously chop and julienne your veggies, then the OXO Good Grip Mandoline Slicer is a good option, but know that the blades are metal, and very sharp as well! Worth it though as it cuts your prep-time in half at least!

I use both - the ceramic knife for the softer more delicate veggies like lettuce and herbs, and the mandoline for more dense veggies, like carrots and cabbage.


- THINK HEARTY -

You're probably in-the-know about all the Sweetgreen-style salad bowl spots popping up. What I think makes them popular over other salad spots is the introduction of grains - making it more of a hearty bowl of veggies and fiber!

So even if you have a recipe that doesn't call for grains or a starch, you'll be happier and fuller if you add some. Here's a list of filling grains and starches I like to add to salads:

- Quinoa
- Red Skin Potatoes
- Corn
- Farro or Barley
- Wild Rice
- Sweet Potatoes
- Beets
- Polenta (just cube, season and brown in a pan w/ light oil)

In addition to getting some healthy grains and/or starches, there's absolutely got to be protein! If you're active like me it's a must, and I like to mix it up and have several types in one bowl. Here's a few staples I keep stocked:

- White Beans
- Black Beans
- Tuna in Olive Oil
- Frozen Edamame
- Eggs
- Baked Tofu
- Nuts
- Frozen Organic Chicken
- Frozen Line Caught Fish

Other staples that make any salad super delicious:

- Brianna's Real French Vinaigrette
- Goddess Dressing
- Pitted Kalamata Olives
- Fried Onions
- Fresh Herbs
- Salsa (my fav is Xochitl Medium Chipotle Salsa)
- Rice Vinegar
- Toasted Sesame Oil (or other nut oils)
- Fish Sauce
- Sambal Oelek 
- Cabbage
- Fruit
- Parmigiano Reggiano

The rest is really up to you! Check out your local farmer's market or grocer and grab what looks good in the veggie & fruit section. Recipes are just a loose suggestion, you can really make anything your own if you're up for experimenting!

Now for the recipes!! I'm a huge fan of Pinterest, a bit addicted at times, but I tend to get a lot of my recipes from Pinterest. Just click on the button below and take a look at my food board. You'll see that there's more than just salad bowls.


In fact, when I get sick of salad, I use the same ingredients to throw a couple of tacos together using some corn tortillas! Best corn tortilla trick is to warm the tortillas (one at a time) over an open flame. Use metal tongs and just flip them often on medium. Allow the tortilla to blister and color to your liking, and then enjoy promptly thereafter!
